I didn't see this anywhere, so I think it would be nice to have somewhere a list of all the changes between 0.7.x and 1.0.0.

I recommend you explore the developer portal notice the timeline and view the ticket reports.
We will produce a simple text file list of changes when we have completed version 1.0.0.

Yes, I know what you mean. Unfortunately, at the moment this is as good as it gets. Some older changes (like the addition of vanilla monsters, etc) will be visible in the developer portal when we finish configuring it in the near future. But for other changes...
As there was no formal change control previously, we have to construct the list of things that have changed previously by looking back through diffs. Although this is firmly on the todo list (and we have clear diffs), I've not seen anyone rushing forward to volunteer to do this work yet.
Although as I mentioned, we will make sure we have such a list at the release of version 1.0.0.
